Ingredients
- Veal shanks (1 per person)
- Chopped onion
- Chopped carrot
- 2c red wine
- 1/3c olive oil
- Thyme
- Bay leaf
- 1 28-32oz can chopped tomatoes, including jus
- 1 can beef stock
- 3 cloves garlic
- Pasta
Instructions
- Pat veal with light flour, salt and pepper
- Add oil to heavy skillet and heat on med. high setting
- Brown shanks on all sides
- Transfer shanks to plate and saute onions, stirring until golden (about 10 minutes)
- Pour tomatoes, beef broth and wine into pot. Add shanks and cook covered over low heat for 1-1/2 to 2 hrs.
- Make pasta and serve
