Ingredients
- 1 1/4 cups dry orzo
- 3-4 cups fresh baby spinach, cut into thin strips
- 1 tablespoon olive oil
- 3 tablespoons finely minced shallots
- 1 clove garlic, peeled, minced
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup crumbled feta cheese
Instructions
- Cook orzo according to package directions, omitting salt.
- Drain well. Return orzo to cooking pot and stir in spinach, allowing it to wilt.
- Add the oil and stir. Add the shallots, garlic, lemon juice, lemon zest, oregano, salt, black pepper and feta cheese.
- Gently stir to combine and serve warm or cold.
