Ingredients
- 1 c sugar (plus 1/3c for later)
- 1/4 c corn starch
- 1-1/2 c cold water
- 3 egg yolks, slightly beaten (save whites for later)
- 1 lemon zest
- 1/4c lemon juice
- 1 TB butter
- 1 baked 9" pie crust
Instructions
- Preheat oven to 350°
- In medium saucepan combine 1c sugar and corn starch. Stir in water until smooth. Stir in egg yolks
- Stirring constantly, bring to boil over medium heat; boil 1 minute. Remove from heat. Stir in lemon peel, juice and butter. Spoon hot filling into pie crust
- In small mixing bowl, beat egg whites at high speed until foamy. Gradually beat in remaining 1/3c sugar. Continue beating until peaks form. Spread meringue evenly over hot filling, sealing to crust
- Bake 15-20 minutes or until golden. Cool on wire rack; refrigerate
