Ingredients
- 1 lb haricot vert, trimmed to 3 inches
- 6 campari cherry tomatoes, quartered
- DRESSING
- 2 TB Dijon mustard (less if you prefer less mustard taste)
- 1/8 cup red wine vinegar
- Big pinch of kosher salt
- A few fresh grinds from a pepper mill
- 4-6 TB olive oil
- Fresh squeezed lemon juice (1/2 lemon)
Instructions
- Boil green beans for 2 minutes, then drain water.
- Add tomatoes
- Add dressing
Notes
- Oil and vinegar balance is about 2/3rds oil to 1/3rd vinegar
- Can add fresh minced garlic and minced shallots for more flavor
- Can also add slivered almonds
