Ingredients
- 4 tomatoes, cut into small pieces
- 1 green pepper, chopped
- 1 onion, chopped
- 1 cucumber, chopped
- 2c tomato juice or Spicy V-8 Juice
- 1-2 cloves, garlic
- 1TB parsley
- 3TB olive oil
- 4TB wine vinegar
- Salt and cayenne pepper
- Black olives, pitted
Instructions
- In large bowl, mix all ingredients except olives. Blend half the mixture in a blender
- Add the other half and add olives
- Serve with croutons
