Ingredients
- 1 spaghetti squash
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup sliced black olives
- 1/4 cup fresh chopped basil
Instructions
- Microwave a whole squash on high for 12-15 minutes. Let cool in microwave for 2 more minutes.
- Meanwhile, thinly slice 1/2 red onion.
- Take squash from microwave (it's HOT!), slice it in half, remove seeds. Use a fork to scrape squash flesh into a medium sized bowl
- Toss with onion, feta, olives and basil
Notes
- Microwave isn't necessarily the best way to cook spaghetti squash. I prefer this method.
