Ingredients
- 4 medium potatoes, cooked, peeled and sliced
- 1T butter
- 1 small onion, chopped
- 1/4t paprika
- 1/2 lb mushrooms, sliced
- 1/2 lb swiss cheese, shredded and divided
- 4 eggs
- 2c milk
- 1t salt
- Dash pepper
Instructions
- Preheat oven to 325º
- In large skillet, melt butter
- Add onion and paprika, cook 5 minutes
- Add mushrooms and cook 5 more minutes
- In greased 2-qt baking dish place a layer potatoes
- Top with half of mushroom mixture
- Sprinkle with half of cheese
- Repeat with remaining potatoes, mushrooms and cheese
- In large bowl, beat eggs, milk, salt and pepper
- Pour over vegetables
- Bake for 50-60 minutes until custard is set
- Sprinkle with half of the cheese
